Yep, it was temporary.

I mentioned last week that I had a huge weight loss and that some of it may come back.  Well, some of it did in fact come back this week and I knew in my head that might happen but it's still disappointing when you get on the scale and see the gain.  Ugh.  Nuts.  I gained 2.8 pounds this week and the thought I had as I was driving from my meeting location to the grocery store was ... well, it could have been much worse.

Thankfully the flu is gone and I've been training for the 5K that my sister and I are going to walk in May.  I registered for it on Wednesday night and Thursday night I started training.  However, because of the weather and because I want to maintain a consistent pace, for now, I've been walking on the treadmill.  On Thursday and Friday I walked approximately 2.5 mph for 30 minutes and walked approximately 1 mile (on Thursday) and 1.25 miles (on Friday).  Apparently on Thursday I had a little bit longer of a warm-up period so I stepped it up on Friday.  Saturday was a massive spring cleaning day for us so I considered that my work out, it certainly felt like one.  Sunday is God's rest day so I made it mine too!  Last night I walked 41 minutes at 2.5 mph and ran for 1 minute.  Yes, you read that correctly I ran for 1 minute.  I think I'd rather pull my eye out with a rusty fork than run but I did it. 

In the meantime I'd come across some recipes for Coconut Shrimp and Onion Rings that we tried and loved and I posted those over the weekend.  Honestly, both of these recipes made me feel like I was practically cheating on the plan though I knew that I wasn't.  They were welcome treats to mix up our dining routine without falling off the plan.  I hope you enjoy them.

Onion Rings

Lord of the Onion Rings (adapted from Hungry Girl)
WW PointsPlus per serving: 2
Makes 2 servings

1 c. corn flakes, crushed
1/4 t. garlic salt
1/4 t. onion powder
1/2 c. egg beaters
1/2 large onion (I used vidalia)

Pre-heat the oven to 375 degrees.
Crush the corn flakes (I put them in the food processor until there are no big chunks)
Coat a pan with cooking spray
Cut the onion into slices
Mix the corn flakes, onion powder and garlic salt in a bowl
Pour the egg beaters into a bowl
Dip the onion slices into the egg mixture and then coat them with the corn flake mixture
Place on the pan
Bake for 15-20 minutes depending on how "done" you want the onion.

YUMMY! Coconut Shrimp

Coconut Shrimp
WW PointsPlus per serving:  5
Makes 4 servings

1/4 c. skim milk
3 T. all purpose flour
1/2 c. cornflakes, crushed
1 c. sweetened coconut flakes
24 medium shrimp, peeled and deveined

Preheat the oven to 450°F. Spray a 10 x 15-inch jelly-roll pan with nonstick spray.

Whisk together the milk and flour in a large bowl. Add the shrimp; toss to coat.

Place the coconut and cornflake crumbs in a large bowl.  Add the shrimp, a few pieces at a time, toss to coat. Place the shrimp in the jelly-roll pan in one layer.  Bake until the shrimp are golden on the outside and opaque in the center, about 5 minutes on each side. Yields 6 shrimps per serving.

It's all her fault.

The women in my family (mom, sister, and me) have always struggled with weight.  For as long as I can remember I think at least one of us has been on some kind of diet or exercise program.  Maybe about a year or two ago my sister started a new plan and lost a bunch of weight.  (Insert applause and tons of YEAH SISSY!!)  We were home for a family reunion last summer and my sister turned to me at one point and asked if Dan or I could drive her car to my parents house.  No problem but how are you going to get home?  To which she replied:  I'm going to run home.  And she did.

Sometime after I started Weight Watchers and after she'd run a half marathon I'd casually mentioned to her that someday when I lost a bunch of weight maybe we could run a half marathon together.  Now, don't go get all OMG on me or anything because we're not going to run a half marathon.  Yet.  I saw my sister online last night and we started chatting and she asked me if I wanted to walk a 5K with her to which I replied, well I did just buy that new pair of tennis shoes.  Apparently, in her mind that was code for "yes".  :)

As I thought about it I got more and more excited about it and I went that instant to the website and registered for it.  We're going to walk a 5K in Eagle River, WI on Saturday, May 14 and I'm excited.  I think that maybe having a goal to work towards is really going to help me get moving.  This way, I know I have to be ready to walk that far by May 14 rather than just saying... oh yeah, I'll add more activity to my day.  So... here we go.

Though there is still a little part of me that is thinking what in the world did I agree to do.  It really is all her fault. 

And I love her for it.

Temporary Weight Loss?

Last Wednesday I started feeling kind of icky.  It started with a pain in my neck and I knew I needed to crack my neck but it hurt to turn my head.  Then the pain worsened to be an all inclusive headache which is when I took some Tylenol PM and headed to bed.  By Thursday morning I was miserable.  I was sick to my stomach and alternated between sweating bullets and being so cold I thought maybe I'd become a penguin.  (For my bestie Krissy - it's too cold for a penguin to be walkin' around outside - sorry but I couldn't resist)  Throw in a little diarrhea and you've got quite the virus.  This continued on through Saturday when my fever spiked at 102.4 degrees.  Not only was I miserable but now I was getting worried because I normally don't run more than 100 or 101 when I'm sick and the last time I'd had a fever that high was when my appendix ruptured.  Luckily, my appendix has already been removed so at least I didn't have to worry about that!  :)

I spent the days sleeping.  Almost all day.  I didn't have much of an appetite and when I did eat I just ended up with more nausea and diarrhea.  So I started on the BRAT diet.  I'd never been on this diet as a kid but heard that it was supposed to work wonders for stopping diarrhea.  If you're not familiar the BRAT diet is made up of Bananas, Rice, Applesauce and Toast.  Not tubular cased meats as my husband first thought.  I'm fine with the RAT of the diet but bananas for every meal got old.  Fast.  Let me say that it does seem to help but after 3 days of eating the exact same thing I'd be happy to not have that combination of foods for ... oh... I don't know... ever.

I weighed in at my meeting today and found out I'd lost 7.4 pounds in a week.  Maybe the BRAT diet isn't so bad?  Then thinking about having bananas, rice, applesauce and toast for dinner?  Nah... I'll happily go back to eating regular healthy food.

9 days off plan...

Sort of.

Friday afternoon, January 28, my bestie Sheri, Briscoe (my black lab mix), Tucker (my yellow lab mix) and I left to drive to Northern Wisconsin.  Our husbands and Sheri's dog, Nitro, would be joining us later that night.  I had packed healthy treats and my food scale for our 9 day long scrap-a-palooza.  I knew that I would likely stray from the plan but that I would try to be good.  This was harder than I anticipated.  I'd forgotten that internet access from the house is questionable, at best, and since I do all of my journaling online I was a little bit lost because I couldn't look up points values.  I still tried to make good decisions though I know that sometimes there was a spotted cow (or two) clouding my judgement. 

When we went grocery shopping we chose lean cuts of meat and Sheri made this amazing dip out of greek yogurt and Hidden Valley Ranch Zesty Southwest Ranch dip mix.  We ate it with lots of baby carrots and celery sticks and it was YUMMY.  I fully intend on making this at home this week and will post a picture/recipe later.  I picked up the usual Crystal Light and made it in big batches to keep in the fridge.

Unfortunately, I don't think the food we brought or the food we bought at the grocery store was the problem.  We spent a portion of two days at the local coffee shop enjoying their free WIFI, some really good coffee drinks and a pretty decent cinnamon roll, better when it was warmed than when it was cold but it was good either way.  Sinfully good.

I tried to sort of make up for the delicious full fat treats that I rarely, if ever, end up eating when I'm at home by spending even a few minutes playing with the dogs outside.  Briscoe absolutely loved racing up and down the driveway with some toy in his mouth.  Or even without the toy because it is lost in the snow.  He still loved it and showed his appreciation by sleeping and snoring all day Monday after we got back.  I am really going to try to work on being more active this week even for a few minutes a day.  Anything that I can do is a step in the right direction, right?

I saw a post on a blog that I read pretty regularly that said if you spend 15 minutes every day doing something you don't normally do that by the end of the year it adds up to 2.2 weeks.  15 minutes is, as the author states, like change you find in the couch cushions.  The intention of the post was to encourage you to pick up a new skill during those moments we spend doing mindless things (ironically, you should probably be doing that instead of reading this!!)

Anyway... ok, I'll try it.
